Gluten Free Chocolate Cake

This is always such a hit when I make it for friends.

Ingredients

200g butter, in cubes
350g dark chocolate
1/4 cup hot water
1/4 cup gluten-free cocoa powder
1 cup caster sugar
3 free-range eggs, whisked
3/4 cup self-raising gluten-free flour

Method

You’ll need a 20cm round cake tin.

  1. Preheat oven to 160°C.
  2. Grease the cake tin and line it with baking paper.
  3. Put butter, 200g of the chocolate (broken into small squares) and the hot water in a double boiler, stir over medium heat until smooth. Remove from heat . Stir in cocoa, caster sugar and eggs. Sift flour over and stir in gently.
  4. Pour half the mix into the cake tin. Chop remaining chocolate and sprinkle half over then pour over the rest of the mix and sprinkle the remaining chopped chocolate on top.
  5. Bake for 60 minutes.
  6. Let the cake cool completely in the pan before removing.
